Avocado & Jalapeño Breakfast Tacos

Ingredients:

  • 5 eggs

  • 1/4 cup milk

  • 1 tbsp Guard Dawg’s Chile Pepper Spice Rub

  • 1/4 cup cheddar cheese

  • 1 avocado sliced thin

  • Lime for garnish (optional)

  • 6 corn tortillas

  • Salt & Pepper to taste

  • Oil for cooking eggs

Instructions:

  1. In a bowl, crack 5 eggs and whisk in milk, salt, and pepper until well combined

  2. In a pan over medium heat, coat the pan with oil.

  3. Once oil is shimmering, add in the eggs and stir on and off the heat. Once the eggs are scrambled to your desired liking, remove from the heat and set aside.

  4. Heat up your tortillas in a pan until golden brown on both sides and set aside.

  5. Now it’s time to assemble: tortilla first, eggs second, top with cheese, and add sliced avocado on top.

  6. Add squeezed lime on top of each taco for an added burst of flavor (optional). Serve and enjoy!
