Kickin’ Lemon Alfredo Pasta

Ingredients:

  • 1/2 onion, diced

  • 4 cloves of garlic, minced 

  • 2 pounds fettuccine pasta

  • 3/4 cup heavy cream 

  • 2 tbsp Guard Dawg’s Chile Pepper Spice Rub 

  • 1 cup of Parmesan cheese 

  • 1 lemon

  • 1/4 cup of pasta water 

  • 1 tbsp Olive oil 

  • Salt and pepper to taste 

  • Chopped parsley (optional)

Instructions:

  1. Bring a large pot of water to a boil. While your water is boiling, let’s make the sauce. 

  2. In a large sauce pan over medium-low heat, add your olive oil. 

  3. Once the oil is shimmering, add in your minced garlic. After about 1 minute, add in your onions and cook until translucent. 

  4. Remove the pan from the heat, and slowly whisk in your heavy cream, parmesan cheese, and freshly squeezed lemon. 

  5. Put the pan back on the heat at a low temperature, and add in the pasta water and cook for another 5-10 minutes or until the sauce has thickened nicely. Reserve to the side while you cook the pasta. 

  6. Add your pasta to the boiling water and cook until the fettuccine is al dente, roughly 8-10 minutes. Strain the pasta from the water, and set back into its original pan. 

  7. Add the Alfredo sauce to pasta and mix nicely with tongs. 

  8. Top with extra parmesan cheese and parsley. Serve and enjoy!
