Steak Fajita Tacos

Ingredients:
1 lb flank steak
6 tortillas
1 cup shredded cheddar cheese
1 onion, sliced thin
2 bell peppers, cut into slices
1 tbsp onion powder
1 tbsp garlic powder
Oil for cooking
1 lime for garnish
Salt & pepper to taste
For the Flank Steak Marinade:
2 tbsp lime juice
1 tbsp olive oil
Instructions:
Steak Marinade: For this recipe, we marinated the steak with lime juice, 1 tbsp of Guard Dawg’s Jalapeño Spice Rub, and olive oil. Let it sit in the fridge for 30 mins to 1 hour before cooking to get a nice flavor on the steak.
Preheat a pan over medium high heat and add in oil at the bottom of the pan.
Once oil is shimmering add in the marinated steak, and cook for 4-5 minutes. Flip onto the other side, and cook for another 4-5 minutes. If you prefer to have this steak more well done, cook for additional minute on both sides.
Remove the steak, and set aside to rest for 15-20 mins. Cut the steak into diced pieces once rested.
In a separate pan over medium heat, add in cooking oil. Heat the oil until it is shimmering, and add in the sliced onion. Cook until the onions are translucent, and add in the sliced bell peppers. Season with Guard Dawg’s Jalapeño Rub, onion powder, garlic powder, salt and pepper.
Once the peppers are soft, cut the heat and set aside.
Now it’s time to assemble: Place a tortilla on a flat surface and top one side with cheese Fold the empty side over onto the other. In a heated pan with oil, add the folded tortilla and heat on both sides until crispy. Repeat this process for the other tacos.
Remove the tortilla, open up, and add in the peppers/onions mixture, diced steak, and garnish with freshly squeezed lime. Serve and Enjoy!
